I prefer simple and nutrient dense when it comes to baking! These muffins are simple but pack a powerful immune punch. Wild blueberries are the most powerful food on the plant and chaga is not only great to drink but baking with it can be fun too. These are the perfect healthy indulgence.
Ingredients:
2 1/2 cups Almond Flour
3 Very Spotty Bananas
1 Chia “Egg” (1 tsp Chia + 2.5 tsp Water)
1/2 cup Wild Blueberries or Wild Blueberry Powder
1 tsp Baking Powder
Optional: 1 tsp Vimergy Chaga
Directions:
Preheat oven to 350. Mix 1tsp chia + 2.5 tsp of water set aside (give it at least 5 minutes to form the right consistency). In a bowl or food processor mix bananas and almond flour together. Add in baking powder and chaga if you are using it.Add in chia egg, then wild blueberries. Mix all ingredients together.Line a muffin tin with baking cups or lightly grease with coconut oil. Evenly scoop batter into 6 muffins.Bake for 20 minutes. Let cool and enjoy!
