Potato Nachos in Under 30 Minutes

I love cooking and creating simple recipes that require minimal time and only use simple, healthy ingredients. I don't believe that recipes need to be difficult to be delicious, and turning an all time favourite dish like nachos (that usually isn't so healthy), into a healthy snack (or meal!) option is what I live for!

This is comfort food at its finest, and perfect for anyone who loves toppings!

What You'll Need:

- Potatoes (sliced into 1/2 inch pieces)

- Romaine Lettuce

- Tomato

- Onion

- Avocado (or guacamole)

- Roasted Chickpeas (you can roasted/bake 1 can of organic chickpeas while the potatoes are baking by placing them on a baking sheet make sure they are completely dry, add garlic powered, salt and pepper to taste and putting them in the oven with the potatoes)

+ creamy cashew sauce (1/2 cup of raw cashews, 1/4 cup of water, juice of one 1 lemon, 1 garlic clove. Blend on high till creamy) 

Recipe/Method: 

1. Bake the sliced potatoes at 375 for 30 minutes. 

2. Depending on how crispy you like them you can bake longer but be sure to flip them half way through. Best part no oil needed!

3.Top with all of the healthy + delicious goodies! Don't hesitate to get creative and add or substitute whatever feels right to you.
