Healthified Plant-Based French Toast

This was insanely delicious and super easy to make! I can’t believe I’m just discovering this now. It’s a must make and the perfect weekend brunch!



Ingredients:


- 2 very ripe bananas

- 1 cup of oat milk (coconut or almond works too!)

- A dash or two of cinnamon

- 4 slices of your favourite bread (I use Queen Street Bakery GF + Vegan Bread)

- 1 tsp of coconut oil (to use on the pan/skillet)


Method:


  1. Add bananas, milk of choice and cinnamon to the blender and blend until the mixture is smooth.

  2. Using a flat bowl, soak bread (both sides) for 3-4 minutes in the batter.

  3. Add drenched bread to frying pan or skillet until it's golden brown on both sides.

  4. Garnish with fresh or frozen berries and maple syrup.
